Authentic Cajun Dirty Rice

Rice Dressing aka Dirty Rice

Ready In: 1 hour, 10 minutes
Also known as "Louisiana Dirty Rice", this dish is a true cajun classic. There are many ways to make this dish, and this is one of the best.


Ingredients

1 pound ground meat browned 1 cup raw rice
1 can cream of chicken soup 1 can onion with beef stock soup
1 bell pepper chopped

Directions
Mix together in greased 8x8 casserole dish. Add 2 cans water soup size to the mixture. Cover and bake at 350 degrees for 1 hour -- do not take lid off.

Delicious Crawfish Etoufee

Ready In: 1 hour, 20 minutes


Ingredients
4 cups finely chopped onions 2 cups finely chopped bell pepper
1/2 cup finely chopped celery 2 minced garlic
2 sticks butter 2 pounds crawfish tails with fat
4 tbsp flour 1 cup water
2 tsp salt 2 tsp cajun or creole seasonings
1/2 cup finely chopped green onion tops (scallions)

Directions
In a heavy pot, preferably black iron (or magnolite or thick bottom heavy duty stainless), melt butter and then add the first four ingredients(onions bell pepper,celery and garlic.) Cook on low heat for 30-40 minutes until vegetables are soft and translucent. This is a must as your dish may be too oniony in taste or reduce the amount of onoins in the recipe. Add flour and stir for one minute. Add crawfish tails and water and continue to cook for 15 minutes. Add seasoning and onion tops and cook for 5 more minutes. More seasoning may be added depending how Cajun you are or how much of a Cajun Wannabe you are. Serve over fresh steaming rice. Serve with Corn Maque Choux and Fresh Tomato Salad.

Easy Cajun Pecan Pie

Cook Time: 45 minutes
Ready In: 55 minutes


Ingredients

1 package Jello vanilla instant pudding 4 serving size 1 cup light or dark corn syrup
3/4 cup evaporated milk 1 egg slightly beaten
1 cup chopped pecans 1 unbaked 8 inch pie shell

Directions
In a glass bowl blend pudding mix with corn syrup. Gradually add the evaporated milk and egg. Blending well.

Add pecans and pour into shell.

Bake 375 degrees until top is firm and begins to crack. 45-50 minutes. Cool 3 hours and serve with Cool Whip or ice cream on top. Bon Appetit!

Classic Cajun Boudoin (Boudin)

This is the best classic boudoin out there.


Ingredients

10 pounds pork roast 3 medium onions whole and 5 shallots
2 bell pepper whole 1 onion
3 bunches green onion chopped fine 1 bunch fresh parsley
1 tsp white pepper 2 tbsp salt
1 1/2 tbsp black pepper 5 tbsp cayenne
9 3/4 cup cooked rice 1 package of casing

Directions
In a large stock pot with enough water to cover the entire contents of pot, boil together the pork, 5 shallots, 3 onions, and 2 bell peppers until meat separates from the bone. Remove roast from water and then remove fat from meat. Reserve stock.

With a meat grinder, grind together the meat with the boiled onion, shallots and peppers. Also grind in a raw whole onion. Return the meat mixture to the pot and add the green onion and parsley, both chopped fine. Add the white pepper, salt, black pepper and cayenne. Stir thoroughly.

Add rice to the mixture and keep the consistency "wet" but not to wet. Stuff the boudoin mixture into the casing, make boudoin balls or eat as a rice dressing. Boudoin goes so well with cracklins.

Because there is a substantial amount of boudoin, most of it will be frozen. To serve, thaw boudoin. Heat water to boiling; place boudoin in water and boil for 10 minutes. Remove and serve. Or if making boudoin balls (see our recipe on site) roll in a small amount of bread crumbs before freezing. To serve, thaw and cook in the oven at 350 for 20 minutes turning balls once or deep fat fry until golden brown.

Southern Praline Walnut Cake

Ready In: 1 hour, 10 minutes

Ingredients
1 box butter pecan cake mix 1 container Coconut Pecan Frosting
4 eggs 3/4 cup Canola or vegetable oil
1 cup water 1 cup nuts (cook's choice is walnut)

Directions
Preheat oven to 350 degrees. Spray a 9-10 inch bundt pan with nonstick cooking spray. Combine the cake mix with the frosting, eggs, oil, water and 1/2 of the pecan/walnut pieces. Mix until combined. Sprinkle the remaining 1/2 of the nuts in the prpared Bundt pan, then pour in the cake batter. Bake at 350 degrees for 50 minutes or until wooden pick comes out clean. Enjoy!
